
Only the best day of the year! Who doesn’t love waffles? I mean come on, crispy and golden on the outside while soft and fluffy on the inside with deep pockets to hold and absorb butter and syrup... YUM! Now, as fall is approaching I thought I would take this staple breakfast item to the next level with this pumpkin spice waffle recipe. Made with buttermilk, pumpkin puree and all things that are good with pumpkin spice leads this recipe to perfection. You are welcome. 😉🤤
What You Will Need:
- 1 ¾ c All-Purpose Flour
- 2 tsp Brown Sugar
- 1 ½ tsp Baking Powder
- 1 tsp Baking Soda
- 1 tsp Pumpkin Pie Spice
- 1 tsp Salt
- 1 ¼ c Buttermilk
- 1 c Canned Pumpkin Puree
- 2 Large Eggs
- ¼ c Unsalted Butter, melted
Step One:
Preheat the oven to 200°F and a waffle iron to medium-high heat. Lightly oil the bottom and the top of the waffle iron.
Step Two:
In a large bowl, combine the flour, baking powder, baking soda, sugar, salt and pumpkin spice.
Step Three:
In a glass measuring cup combine buttermilk, pumpkin puree, eggs and butter. Next you will need to pour this over your dry ingredients while stirring with a rubber spatula. Combine until moist but still slightly lumpy.
Step Four:
With a ladle, scoop about a ½ cup of your batter into the waffle iron, cook until golden and crispy (about 4-5 minutes) then keep warm in the oven. Serve!
When you make these waffles, you will never go back to the regular way. It’s kind of funny because in my house we make these year-round.
