Studies have found that ingesting lavender on a regular basis can decrease anxiety by 20% in stressful situations. All the more reason to eat it right?

Besides, I think I have yet to find somebody who doesn’t love ice cream.

 I know that when things get a little crazy, and you’re in desperate need of a ‘pick-me-up.’ That happy feeling is best met with a big scoop, or two, of ice cream. I have got the perfect fix for you.

 

Make Lemon Lavender Ice Cream for you and the Kids and Lemon Lavender Mojitos for the adults. Jump-start the ambiance with Candleberry’s Lemon Lavender Angel Food room spray, light the candle and let the festivities begin!

 

Lemon Lavender Ice Cream Recipe:

Ingredients:

1 ½ cups whole milk, divided.

1 cup sugar

5 egg yolks

Pinch of salt

1 ½ cups heavy cream

¾ cup grape juice (no sugar added)

Juice of 2 lemons

3 drops Lavender Essential Oil

 

Instructions:

Heat 1 cup of milk, salt and the sugar in saucepan to seaming, stirring to dissolve sugar. Whisk together egg yolks. Pour ¼ of the milk mixture into the egg yolk, whisking constantly. Pour the tempered egg yolk into the saucepan until mixture comes to a boil and thickens. Remove from heat and pour into a bowl. Whisk in the remaining ½ cup milk, heavy cream, grape juice, lemon juice and lavender oil. Refrigerate until fully chilled.

When the base is chilled, freeze in an ice cream maker according to manufacturer instructions, Scoop the ice cream into a freezer safe container and freeze for a least 6 hours or overnight. Let sit on the counter for 10 minutes before scooping and Enjoy!

 

 

 

Lemon Lavender Mojitos

In case you're interested, lavender actually has many health benefits… It helps you relax, it can beat bloating, and it can reduce itchiness. So, basically, this cocktail could make you feel like a million dollars.

Ingredients:

5 fresh spearmint leaves

1 tsp confectioners’ sugar

Juice of half Meyer lemon

½ tsp dried culinary lavender

2-ounce light rum

Club soda to fill.

 

Instructions

In a quart mason Jar or a shaker, combine the spearmint leaves, confectioners’ sugar, Meyer lemon juice and lavender. Muddle completely. Strain into a Collins glass. Fill the glass with ice. Pour rum over the ice and fill with Club Soda. Garnish with lavender sprig, mint sprig and/ or a Meyer lemon slice and serve.
